Fried catfish is a staple in Southern cooking, and it makes the perfect meal on a nice summer day. Here is a simple and delicious fried catfish recipe, and the best part is, it's air-fried!
In a medium bowl, whisk together Lefty's Fish N' Chicken Fry Mix and water. Set mixture aside.
Cut catfish into bite-size pieces. Evenly sprinkle with the taco seasoning and mix. *Optional*
Add fish to the mixture, cover, and let marinate overnight in the refrigerator.
The next day, blend fish and mixture again.
Preheat the air fryer to 400 degrees F.
Spray the air fryer's basket with nonstick cooking spray and arrange the fish side by side in a single layer in the basket. Do not place them on top of each other.
Cook for approximately 8 minutes or until the internal temperature of the fish reaches 145 degrees F. Turn pieces halfway through.
Remove the fish from the air fryer and set it aside on a paper towel-lined plate. Allowing it to cool for a few minutes.
While the fish cools, warm corn tortillas on a dry, hot skillet for about 2 to 3 minutes at 300°F, or until soft, and wrap them in a towel to keep them warm.
Build your tacos, layering fish, lettuce, and cheese in the corn tortillas. Garnish as desired with fresh lime. Serve immediately.
