Fried Lobster Done the Right Way!
2 Lobster Tails
1/4 Cup Lefty's Fish n Chicken Mix
1 Cup of Water
Butterfly both lobster tails by using a sharp knife. For each, carefully cut, in the center beginning near the tail, the shell (back side). Slowly continue to cut until the end of the shell. During this process, make sure you are cutting half way through the meat. Peel the shell apart towards the tail. Gently pull up the meat and place the butterflied lobster on top of the shell.
Heat cooking oil to 350 degrees.
Mix 1/4 cup Lefty's Fish n' Chicken Fry Mix with 1 cup water.
In another bowl, set aside a cup of Lefty's Fish n' Chicken Fry Mix.
Place lobster tails in wet batter and coat the entire meat.
Then take lobster tails from wet batter and coat with dry mix, shaking off excess flour.
Fry the lobster tails for 4-5 minutes.
Plate and enjoy!
How to Butterfly Cut the Lobster Tail
1. Take a knife and from the back of the lobster (lengthwise) and work the knife into the center starting from the back and finishing at the front.
2. Then peeling the shell apart and down the middle. Once doing that, you should be able to take the meat out and lay it on top of the shell to get the butterfly lobster which is then ready for seasoning.
